Really wonderfull book.
Tells a little history of the Turkish cuisine and then the recipes are well defined and accompanied with high quality pictures to have a better idea of the dish.
All kinds of recipes...from the easiest like mezze to little more complicated ones.
I really recommend this great book!

Many Turkish cookbooks are difficult for a Western kitchen; this is a treat, with excellent pictures and really engaging, very personal text. Hugely enjoyable.

Unique Turkish Cookbook

As a Turkish man myself, I find myself lucky to stumble upon this unique turkish cookbook. The book consists many traditional and regional recipes. Turkish cuisine is mainly formed of imperial palace kitchen and regional kitchen. This book captures both very well. I have noticed the author added an american twist to some recipes, which I found very welcoming. These recipes are dutifully noted, so you can always look up the original recipe if it is not already explained in the book.

The book is a great addition to any library that focuses on Turkish cooking. If this is going to be your first Turkish cookbook and you are focusing on only traditional cooking (which has harder to find ingredients or methods), you might want to consider other books.The one that I use: Sultan's Kitchen: A Turkish Cookbook . This doesn't necessarily mean that the book doesn't have enough traditional recipes, it does and on the plus side, it may have more regional recipes than in any Turkish cookbook I've seen. Especially aegean, Black Sea recipes are plenty, which are usually more vegetable and olive oil based than the spicy, tangy eastern region recipes.

I also agree with other reviewers who noted that the font blends with background easily. I wish they chose a different font. However, recipe fonts don't have any problems.

Although I really don't mind the winter,a sprinkling of sun in the kitchen is a welcome present.
And both the recipes and the photographs (mind you not all the recipes have photographs but most of them...)bring a bit of sunshine in your daily diet.
The problem with a lot of "international " cookbooks are the ingredients. How does anyone expect you to find some obscure vegetable or an unheard of spice blend? Well,the author gives you alternatives . For instance certain Turkish cheeses are replaced by feta,cheddar and even mozzarella! Those alternatives and the fact that most recipes are not overly complicated make this a very pleasant introduction to the Turkish cuisine.

This is such a fabulous book. I want to try every single recipe in it (well, almost). This is just the kind of food I love and I truly can see me making lots of these tempting dishes. I love all the explanations about Turkey and the ones before each recipe and the fact they say “if you don’t have this, you can replace it with that”. My only complaint is that I would’ve loved a photo for each recipe.

This is a lovely book. I have tried to cook from books bought in Turkey but without much success;I think it is a combination of vague measurements and poor translation.
These recipes are clearly written with precise metric quantities and the photographs give an idea of how the finished dish should look.
Living in a rural area, I particularly appreciated the advice on sources and substitutes in the section on essential ingredients.
I have deducted one star because though I love the recipes, I felt there could have been more of them.

I bought this book for a friend who lived in Turkey for many years and they are delighted with it because of the high quality of presentation/layout, the photography and the recipes. The book also gives an insight into the regional variations in food and customs across Turkey.

Included in the 240 pages or so of this book are 100 recipes for meze, koftes, kebabs, meat/fish dishes, salads and desserts plus there's plenty too for the vegetarian. Some of the recipes are simplified to make preparation easier but I'm assured by my friend the end result is authentically Turkish. Even if you aren't going to cook all the dishes yourself this is a mouth-watering tour through Turkish cuisine by John Gregory-Smith. Recommended.

This books is made of high quality pages and full of fine recipes, most of which accompanied by photos. It's also nice to read some of the authors notes. I enjoy cooking different cuisines and what I have tried from this (the pomegranate jam especially) has been a success.

Bought this lovely cook book after a trip to Istanbul, where we ate fish baps freshly fried over a fire on the shore of the Bosporus, hoping to recreate a few culinary memories from the book , it’s well laid out and has beautiful photos
