5,0 sur 5 étoiles another great book from Sabrina Ghayour
Commenté au Royaume-Uni 🇬🇧 le 3 mai 2016

Sirocco is the second book written by the talented Sabrina Ghayour, the first book , Persiana , was awarded a very well deserved 'Best New Cookbook' at the observer food monthly awards in 2014 .

I have not had chance to cook any of the recipes from Sirocco as yet as the book only arrived through my door about half an hour ago , I stopped what I was doing and started to read the book.
I have to say that the photographs of the cover do not pick up its true beauty , the greens , golds and pinks that you van see in the photograph of the book have a wonderful sheen to them and its .a joy to look at ..so as you can tell I was seduced into delving through the pages as soon as I opened the newly delivered parcel containing the book .... good start , but as the saying goes ' never judge a book by its cover ' so I opend the pages.
I was delighted , after a brief introduction the book then goes off into a few pages describing ' my kitchen store cupboard ' and this tells us a small description of the key spices used within the recipes within the book... very useful .
Now onto the recipes which are set out in easy to follow and browse through sections.
The first recipe in the book is for 'Butternut Rosti with poached eggs' and if I had not just finished my lunch I might have been straiht into the kitchen to make these, they look delicious from reading the recipe and looking at the photograph that Haarala Hamilton has taken to accompany the recipe. I have already book marked the page !
As a vegetarian I am always unsure how many recipes will be in a new book that will suit my own diet , with Sirocco I am not disapointed as there are a whole host of easy to cook and delicious sounding recipes that are suitable for a vegetarian diet. For me and other vegetarians this shoule be viewed as a great bonus to the book .
My family all eat meat and fish so the recipes that include these will also be well used.
All the recipes look achievable with ingredients that should be easy enough to buy , the only ingredient that I have noticed that might not be so easy to obtain is quince and that is for a recipe for quince tartin with cinnamon cream and if I am unable to obtain quince then I will make the tatin substituting firm pears instead of the quince as they should also work beautifully in this recipe.
This is a good book ... no scrap that .... this is a Great Book , one that will be cooked form time and time again , one that will be referred to when vegetarian guests come to call .. a book that will be read and browsed through many times , the photography is lovely and makes you want to cook the recipes , and there is an added bonus of the book having not one but two ribbon page markers , these have already been used to mark out recipes I would like to try as have various pieces of paper that I have added as additional page markers .

I am looking forward to starting cooking and tasting the recipes from this book and know its a book that is well worthy of shelf space in my home , I can see myself using the book to cook from many many times.
I'm impressed. all the recipes look

5,0 sur 5 étoiles An absolute must. Brilliant.

This is fantastic. I Spent many years in various places around the Middle East and love the cuisine, collecting many cookbooks over the years. This lady is brilliant. I loved Persiana, this is maybe, marginally even better. I love the fact that she introduces the spices of the region in easy recipes such as salads where you can get to really taste the flavours and decide for yourself if you like them, Such as the butterbean and za'atar dip as an alternative to humous. The apple, sumac, red onion & pomegranate salad that looks delicious. And Also recipes that include lots of rose water and pomegranate seeds common in many dishes. She doesn't always use the original name in the recipe titles, for instance Persia/iran is famous for its rice dishes, but she doesn't call her recipes pilafs or biryanis. The Salads here are fantastic, many are great options on tabbouli. There are plenty of savoury fritters which are my favourites, including the famous Jewish fritters called latke. And a bread Ive heard of but never tried called challah which looks great and Im anxious to make. Deep fried feta cubes with a lemon jam dip looks simple but sensational. Lots of tasty aubergine dishes, which as a Middle Eastern cookbook would be naked without, including yet another version of baba ganoush, or the original Turksh name of yogurtu (with yogurt) patlican (aubergine) salatasi (salad). Spinach and walnut balls, oh yeah bring it on, then dip them into yogurt or cavik to eat. Pan fried figs in serrano ham I dare you to resist. The entire book is full of delicious recipes, and the only one Im not keen on trying is the baby octopus or squid tentacles, after years of crunching through them I just don't really like the taste even if the texture is the ideal contrast in many dishes. I'll stick to deep fried battered tube rings (kalamari) which doesn't appear here. What is there, is the most mouthwatering chocolate mousse with, unusually, cardamon, and her chocolate chip cookies include one of my favourite nuts that isnt used anywhere near as much as I would like in the UK, pistachios. It is fantastic. This is going to be ne of my core go to books.
This is a great cookbook. A nice big book clearly laid out and in metric measurements. The Illustrations are beautiful with one for each recipe. I cannot recommend this highly enough. Sheer, pure sensory pleasure.

1,0 sur 5 étoiles horrible food combination, lots of lamb meat

this is very overrated book, I doubt the good review?!!! nothing special about it, if you are from Iran or from middle east thinking this book has Persian or middle east recipes then this book is not for you at all, it has nothing to do with Persian or middle east recipes, I do not like Sabrina taste in food combination, the photos and recipes do not make you want to try anything, I think the dessert section may worth trying although it has very few recipes but other food look so weird and bland and nobody like to prepare such food, and most food are like side dishes not main recipe, the author uses similar recipes in most of all her books with some twist in each but each book has different name( I know because I had all of them and will not use them), the salad section is not good at all , who wants to try to eat apple with onion salad?anyway it is not the taste of middle east people from Israel,Iran,Turkey or Arabic countries, this book just contain weird recipe and food combination that impossible to try, and every recipe has pomegranate in it to make it feel it is Persian, book use lots of lamb meat and weird ingredients that is hard to find.

Sirocco is the follow up book to Persiana. Whereas Persiana was an

‘homage to the enchanting dishes of the Middle East’

Sirocco, imitating the wind that blows across the Middle East and North Africa from east to west is a collection of recipes, none of which is authentically eastern but all of which show the influence of the east.

After an introduction and a piece on Sabrina Ghayour’s kitchen cupboard, the book is divided into five sections:
• Brilliant Breakfasts and Brunches
• Light Bites and Savoury Snacks
• Spectacular Salads and Sides
• Mouthwatering Main Dishes
• Superb Bakes and Sweet Treats
followed by an index.
Reading through the recipes, they are as splendid as the section names imply. They are also simple to cook because Ms Ghayour has used western rather than eastern cooking methods and, as far as I can see, there is nothing here that a half-way competent cook couldn’t cope with. It is beautifully illustrated so that you can see what your dish should look like.

It is very difficult to single out any recipe for special praise as they all look delicious, but I think what I particularly like are the recipes where she has taken a very western ingredient and by mixing it with less obvious ingredients and adding spices, has turned it into something completely new and exciting. Her take on salads and snacks will revolutionise the light lunch and burgers will never be the same again.

But that is not to downplay the other recipes. They all look gorgeous and on this freezing day in late April, as I watch the hail and snow swirl around my garden, I look forward to the Aubergine, Pepper and Tomato Stew I am going to have for my dinner tonight – so warm and comforting.

If you have already read Persiana, you probably don’t need to read reviews of this book. If you haven’t, may I suggest you buy it at the same time as you buy this. I don’t think you will regret it.

5,0 sur 5 étoiles More accessible than 'Persiana'

'Sirocco' is as beautifully presented Sabrina Ghayour's 2014 bestseller 'Persiana' ... with the addition of two ribbon bookmarks which makes meal planning with a feline companion unwise!

The cookbook is a great way to familiarise yourself with Middle Eastern ingredients, or to use up South East Asian ingredients. The index is thorough: six entries for 'pomegranate molasses', five for 'saffron', seven for 'sumac', five for 'zaatar' six for 'harissa'.

Ghayour positively encourages substitution and experimentation in the introduction ("Middle Eastern cookery just isn't rigid in that way"). So I am already musing on a different fish (lightly smoked trout?) for 'lemon turmeric & black pepper salmon', a different citrus (yuzu?) for 'orange thyme & spice wings', a different nut (cumin cashews?) for 'lamb lettuce wraps with peanut sauce'.

I have also bookmarked 'tamarind honey prawns', 'stir fried tangy prawns' (turmeric and preserved lemons), 'spice roasted duck' (sumac and pomegranate molasses) and 'citrus & zaatar chicken'. The latter two are whole birds but could easily adapt to jointed portions.

As a relative newcomer to Middle Eastern cookery I can see myself reaching for this book and then graduating to 'Persiana', but 'Sirocco' may disappoint those looking for authentic dishes or those with more experience of Middle Eastern ingredients.

5,0 sur 5 étoiles Another Masterpiece from Sabrina
Commenté au Royaume-Uni 🇬🇧 le 6 mai 2016

I am only commentating on the sample - but it seems to me that, once again, Sabrina has written another masterpiece. Already the sample of the full book has given me inspiration and I love the recipes in the sample: just making green beans more interesting (works just brilliantly with a simple baked cod) and the citrus za'atar chicken is going to be a weekly or monthly regular in my kitchen along with the nectarine pavlova (the out of the ordinary tea syrup makes this dish); try the lamb, apricot & fennel seed lollipops (don't worry you can ditch the wooden skewers says Sabrina) which are really fab meatballs (kofta) with the Spiced beetroot yogurt on the side. I've gone on to buy the full edition and, once again, I could not recommend Sabrina's work of art any higher - It doesn't eclipse Persiana because that is a work of art in itself - these two books should sit side by side in your most used cookbook place .... !
